      Default Washed out whites?

I've always struggled when shooting in sunlight to capture all the detail. Looking at the histogram I can see for example on some pics the whites are off the scale and this is highlited on the pictures.

I usually shoot AV mode - Is there anyway of stopping this or is it just a case of using full P mode or adjusting the av +/- button thingy? I can't remember the techy name but it usually makes the rest of the picture under exposed then. I could take 2 pics and layer then in PS but I'm trying to take a decent pic rather than spend ages editing.

Yes use the - ev step button to under expose so that you don't burn out the highlights. You can also take two images and merge to correctly expose all areas. Thats called hdr or high dynamic range. you could expose for the sky and use some flash on the foreground to balance the scene better.
